Unique Climate of high mountain creates unique tea experience
Taiwan's high mountain tea (Formosa tea) generally refers to the teas grow in altitude higher than 1,000 meters or above, due to the unique environmental factors of high altitude areas, each mountain tea has a different taste and flavor.
Because the alpine climate is cold, cloudy and the average sunshine is short, these factors reduced the content of "catechins" and other bitter ingredients in tea leaves, and thus improve the "catechamic acid" and "soluble nitrogen" which increased the sweetness of the tea leave. Also, the large temperature difference between day and night will slow down the growth of tea tree, so that tea leaves are always grow with soft leaves, thick foliage, sweet taste and strong flavor,
Lightly roasted Oolong taste original flavor
In order to enjoy the original flavor of Formosa tea, the tea are generally used light roasted or even non-roasted. Such as pear Li Shan tea, Dayu Ling tea, Shanlinxi tea and so on. Most Formosa tea are belongs to Oolong tea because they are light fermentated.
